After over a year of research and pre production, today was finally the first day of production for Granos de vida!!!!!
Tom is a professor in the Food Science and Nutrition Department at Cal Poly, (my alma mater). He teachers the Cal Poly Chocolates class, a production course that truly implements Cal Poly’s Learn by doing philosophy.
Tom also owns Mama Ganche, a chocolate shop on Monterey Street in downtown San Luis Obispo, Ca. He has been working with cacao farmers in West Africa for years.
Today we spoke about consumer trends in chocolate, the future of chocolate, what makes “fine chocolate,” how the producer is effected by the consumer demand and much more.
I am so thrilled to have Tom as a voice in the film and am grateful for the time he took to share his knowledge.
